Dandelion Muffins- Gluten Free this time!

The dandelions are popping up left and right and the children have been busy collecting them for boquets, rings and crowns.  We decided to dust off an old recipe (Dandelion Muffins), update it to a gluten free version (mainly subbing the flours for Jules Gluten Free Flour, and try it out.  Nothing tastes quite like spring as a rhubarb-dandelion muffin with chia streusel!
We soaked the dandelion petals for 24 hours in a salt-water solution to make sure no buggies were still living in them.  Then the baking began!
